Sweet & Sour Fish Fillet


INGREDIENTS:


½ cup fresh lemon juice
¼ cup tomato ketchup
2 tablespoon onion leaves chopped for garnish
1 tablespoon butter
400 grams cream dory fillets, thawed
1 cup vegetable oil (deep fry)
Pinch of salt and pepper
2 tablespoon white sugar
3 pieces egg
1 cup all- purpose flour

2 tablespoon rice wine



PROCEDURE:

How to prepare a Battered Fish Fillet coated egg and flour

Whisk the 3 eggs into a bowl. 
Put a 1 cup of all-purpose flour on a large plate. 
Set aside; heat a large frying pan over medium-high heat. 
Season the fish fillet with salt and pepper. 
Dip each fish fillet into the egg and all-purpose flour on both sides. 
Then deep fry the coated fillet with egg and flour until golden brown. 
Remove the fillet on the pan and drain the excess oil on paper towels.


For the Sweet and Sour Sauce

In a medium sauce pan combine butter, lemon juice, ketchup, white sugar, rice wine and let it simmer over slow-medium heat. 
Separate a mixture of 2 tablespoon flour in water until thickened and pour into the sauce. Let it simmer for about 2-3 minutes. 
Then add the golden brown fish fillet into the sauce. 
And finally, garnish it with onion leaves.
